The Feathers, Rosendale
Best for: country-classic dining in a cottage-core space.
When the maximalist storybook hotel Six Bells opened earlier this summer, The Feathers tavern debuted inside. The charming spot features hand-painted walls, cosy wooden booths, and country-style chairs with heart cut-outs and frilled floral cushions. The food is American country cuisine, with an oversized pickle plate, juicy pork shank with cider mustard sauce, and chicken and vegetable pot pie.

House of Stefas, Millbrook
Best for: family celebrations or a special night out.
This is the first Greek concept from the Stefanopoulos brothers, inspired by Athenian supper clubs. Each dining area features a different design: Poseidon’s Palace, with its teal mohair banquettes and sea glass chandelier, and a hidden speakeasy-style room off the kitchen. Expect Greek dishes like salt-crusted whole fish and chicken souvlaki, and save room for the kunafe for two.

Hudson Diner, Hudson
Best for: diner food with a pedigree.
When Mel the Bakery moved from Manhattan to Hudson in 2023, it was an instant hit. Now, the team has joined forces with The Meat Hook to serve up dishes like steak tartare, wedge salad, and spaghetti pie – plus diner staples such as a tuna melt on bread made at Mel out of the classic 1940s train-car diner – since mid-June.

Little Goat, Rhinebeck
Best for: a light lunch or grabbing ingredients to make dinner at home.
Inside an 18th-century townhouse, Little Goat is a shop, restaurant and bakery serving a clean, countryside-chic aesthetic. The all-day café serves vegetable-forward dishes, while dinner is all about housemade pasta (we recommend the rigatoni) and local grilled and toasted meat and fish. Pick up bread from Sparrowbush Baker, balsamic vinegar from Flamingo Estate, and rotisserie chicken to take home.

Moreish, Beacon
Best for: getting your British food fix.
Having renovated the space into a cosy café with wood floors and mismatched vintage plates, husband-and-wife duo Michael Johnson (a British ex-pat) and Shay Aponte are behind this new casual spot on Main Street. Expect dishes like a full English breakfast, toad in the hole, and beer-battered fish and chips – plus a traditional roast on the first Sunday of every month.
TALLOW, Millerton
Best for: healthy food that’s still satisfies the cravings.
Call it fancy fast food if you must. TALLOW serves up smash burgers from grass-fed cows and chicken sandwiches from pasture-raised birds, and all produce comes from regenerative farms that don’t use any pesticides. Of course, there are fries – cooked in tallow, just like everything else. Best of all, it’s inside a former Burger King, and the drive-thru is functioning.

Isabela, Amenia
Best for: a laid-back date night with your partner.
An ex-Brooklyn Michelin-starred chef opened Isabela this spring, and it’s been an instant hit. The farmhouse-style dining room is airy, and the menu offers unique spins on local ingredients. Start with the sourdough bread and butter and one of the crispy salads, followed by the perfectly pillowy kale gnudi in a parmesan brood, and end with Josephine’s Sundae.
